Aranitas with Sour Cream and Cilantro

The word "aranitas" translates to "spiders" and this delish appetizer is named such because the finished product, apparently, resembles spider legs . This recipe's main ingredient, plantain, is similar to a banana and can be found in the produce section of most grocery stores.

Ingredients

  • 2 large green plantains, peeled
  • 1 clove garlic, minced
  • 1/4 Teaspoon salt
  • Vegetable oil
  • Sour cream
  • Fresh cilantro leaves

Directions

  • Coarsely grate plantains through the large holes of a hand-held metal grater. Mix shredded plantains with garlic and salt. Add oil into a large skillet to about 1/2-inch deep. Form 1 tablespoon portions of shredded plantain into patties and carefully drop into oil in pan. Cook for about 3 - 5 minutes on each side until lightly browned and crisp. Remove from pan and set on a bed of paper towels to drain of excess oil. Repeat process with remaining mixture adding more oil as necessary. Top with a dollop of sour cream and cilantro leaf and serve.

    Makes about 40 aranitas
