Baby red totatoes make a terrific base for hors d'oeuvres. Potatoes are so versatile and can be served at a casual event or a more formal affair. If you're casually entertaining a group of friends use the recipe provided below. Ingredients
9 baby red potatoes
1 (8 ounce) container sour cream
1 bunch fresh chives, snipped into 1/4-inch lengths
Note: Makes 18 hors d'oeuvres or about 6 servings.
Directions
Add potatoes to a pot and cover in water.
Bring water to a boil over medium-high heat and cook until potatoes are tender, about 15 minutes.
Drain potatoes in a colander and cool.
Cut potatoes in half width-wise. Turn potatoes cut side down and use a paring knife to make a small well in the top of each potato. Add a drop of sour cream into the well and serve cool.
