Baby Red Potato Halves with Chive Cream

Baby red totatoes make a terrific base for hors d'oeuvres. Potatoes are so versatile and can be served at a casual event or a more formal affair. If you're casually entertaining a group of friends use the recipe provided below. If your serving a crowd with more discerning tastebuds and your budget permits, splurge on the luxury ingredient of caviar or roe to top these off! Either way your guests will love this! After all, who doesn't like a potato?

Ingredients

9 baby red potatoes
1 (8 ounce) container sour cream
1 bunch fresh chives, snipped into 1/4-inch lengths

Note: Makes 18 hors d'oeuvres or about 6 servings.

Directions

Add potatoes to a pot and cover in water.

Bring water to a boil over medium-high heat and cook until potatoes are tender, about 15 minutes.

Drain potatoes in a colander and cool.

Cut potatoes in half width-wise. Turn potatoes cut side down and use a paring knife to make a small well in the top of each potato. Add a drop of sour cream into the well and serve cool.
