Who says you need a fork to enjoy salad? These hand held individual salad bites are perfect for summer parties and are simple enough to make that you can make them in advance, saving your time when planning your party menu.
And if the ease of this recipe weren't enough to convince you to make it, it has bacon. Need we say more?
Ingredients:
Romaine lettuce
Thinly sliced bacon
Parmigian cheese
Roma tomatoes
Olive oil
Salt & pepper
Directions:
Thoroughly wash and dry the romaine lettuce and tomato, and then grill the bacon to your taste (I prefer crispy bacon, but softly grilled bacon works just as well).
Trim the base of the lettuce leaves and lay them on your serving platter.
Finely chop the grilled bacon and scatter across the lettuce, then finely grate your cheese across the lettuce.
Drizzle the platter with olive oil.
Then, slice your tomato in half and use a squeezer or spoon to gently squeeze the tomato juice across the platter. You can chop up the tomato and add to the salad, though we prefer to leave it out and use the tomato for another dish.
Season the salad with salt and pepper just before serving.
