Banana Cream Pie is one of the most popular desserts in America. The flaky crust, the creamy pudding, and the sweet bananas, come together to make an all-American dessert that's as delicious as it is lovely to present.
Instead of going through the process of making a complete pie, why not make Banana Cream Pie in an individually sized jar? And to make the pie even easier, skip the pie crust and use puff pastry instead.
Layered inside the jar are puff pastry, homemade vanilla pudding, and fresh, sliced bananas. Make Banana Cream Pie in a jar for your next party and everyone will love their individually sized desserts!
1 recipe for Vanilla Pudding (Recipe Below)
1 sheet of Puff Pastry, Thawed
3 Bananas, Sliced into Coins
3/4 cup Non-Fat Milk
1/2 cup Heavy Cream
1 cup Unsweetened Almond Milk
3 tablespoons Cornstarch
1/8 teaspoon Salt
1/4 cup Sugar
2 teaspoons Pure Vanilla Extract
Start by baking the puff pastry. Place the puff pastry on a clean surface and cut into 24 equal pieces. Transfer the puff pastry to a baking sheet and bake until the dough had puffed up and starts to turn a light golden brown.
Allow the puff pastry to cool completely.
To make the vanilla pudding, combine the milk, heavy cream, and almond milk in a medium saucepan. Place the pan over medium heat and heat until it reaches a slow simmer. Meanwhile, whisk together the cornstarch, salt, sugar, and egg in a medium bowl.
Remove the milk from the heat and slowly pour it into the cornstarch mixture, whisking constantly. Pour the liquid back into the saucepan and place it over medium-high heat. Whisk constantly until the mixture thickens, about 2 minutes.
Remove the pudding from the heat and transfer to a bowl. Place plastic wrap directly on top of pudding, and let it sit at room temperature until it cools completely. Place in the refrigerator to chill.
To assemble the banana cream pie, place two pieces of puff pastry at the bottom of each jar. Continue to layer as follows: a dollop of vanilla pudding, a few slices of banana, two pieces of puff pastry, a dollop of the remaining vanilla pudding, a few slices of the remaining bananas (leaving 4 pieces), the last 2 pieces of puff pastry, and then top each jar with one banana slice.
Enjoy immediately, or cover with plastic wrap and place in the refrigerator until ready to serve. These last up to 5 days, sealed, in the refrigerator.
