The idea of drinking a "swizzle" may raise some eyebrows, but it's one of the many time-tested classics served at Brooklyn hotspot, Clover Club.
A swizzle, as bartender Katie Stipe duly explained, is named for the signature stick used to stir it. The menu calls it "a labor of love and definitely worth the wait."
For summer, she recommended their variation on the Bermuda Swizzle - a top-seller that looks nearly as good as it tastes. Owner of the Flatiron Lounge, Pegu Club, Julie Reiner, claims it has customers raving: "Best Drink Ever!"
While the heat lasts, break out a Collins glass and create your own Bermuda Swizzle. It might be your first - but it certainly will not be your last!
Ingredients
1 and a half ounces. black rum (e.g. Gosling's Black Seal Rum)
half ounce lime juice
half ounce. pineapple juice
half ounce simple syrup
half ounce velvet falernum
Angostura bitters
Pellet ice
Pineapple slice
Directions
Mix ingredients with pellet ice in a Collins Glass.
Rotate swizzle stick with palms. A spiral bar spoon will work as well.
Repeat 1-2 until drink is slightly foamy and glass is well frosted.
Sprinkle Angostura Bitters on top.
Adorn with pineapple slice.
