Make your favorite vanilla cupcakes from scratch, or with a mix and tuck a little blueberry surprise in the middle.
Ingredients
1 box french vanilla cake mix or batter for vanilla cupcakes from scratch
1 can blueberry pie filling
4 ounces of softened butter
4 ounces softened cream cheese
2 cups confectioners sugar
1 teaspoon vanilla
Directions
Using a cake mix, or your favorite recipe, make the batter for vanilla cupcakes. Line cupcake pans with paper liners. Fill cups about 2/3 full with the batter.
Drop about 1 teaspoon of blueberry pie filling onto the batter and then spoon a little additional batter on top of the filling. Bake as directed. Cool completely.

For the frosting, combine the butter and cream cheese in a large bowl and beat together. Add the confectioners sugar, one cup at a time until smooth and creamy. Beat in the vanilla.
Frost cupcakes with the cream cheese frosting and add a fresh blueberry to the top.
