Blueberry Filled Red Velvet Cupcakes

For a party dessert that will blow your guests away, try this decadent, yet easy treat.

Red velvet cupcakes immediately up the sophistication factor at an event. We've paired the classic recipe (made with box mix!) and filled them with a blueberry filling.


With the abundance of blueberries during the summer, there's no better time to try this easy dessert recipe out!

Ingredients

Red velvet cupcakes (you can make your own from a box or from scratch!)
Blueberry filling (Again, make your own or keep it easy with a store-brought filling. We used a pie one!)
Cream cheese icing (you get the idea, right?)

Directions

First, bake your red velvet cupcakes according to your recipe or the box.

Once they're baked and have cooled completely, take each cupcake and cut a circle at an angle from the top so that you can pull out a cone-shaped piece. If you have a large piping tip it will do wonders for you here.

Don't just cast the cake cone aside - reserve the top part! You'll need it later on.

Fill the space in the cupcake with your blueberry filling. It's easiest to do by piping in either with a pastry bag or plastic sandwich one.

Remember the cake cone top from before? Place it on top of the cupcake filling so it won't interfere with your frosting.

Use another piping bag to ice the cupcakes with the cream cheese icing. Top with a fresh blueberry if you so wish!

Helpful Hint

When preparing the cake mix you can add a few drops of blue food coloring to your batter so that your dessert is really all blue!
