Bocconcini are small balls of cheese, usually mozzarella, that are perfect for appetizers. This recipe is very simple and a great way to kick off an Italian dinner party.
Ingredients
1/4 Cup olive oil
3 tablespoons balsamic vinegar
Pinch salt and pepper
18 bocconcini balls
18 cherry tomatoes
1/2 Cup finely chopped basil leaves
18 bamboo skewers
Directions
Whisk together olive oil, vinegar, basil leaves, salt, and pepper in a large bowl. Add bocconcini and toss to coat.
Cut tops off cherry tomatoes and remove seeds and excess pulp from inside. Stuff a bocconcini inside a cherry tomato and slide on to the tip of a skewer. Assemble remaining ingredients and arrange skewers on a platter to serve.
