Bocconcini and Cherry Tomato Skewers

Bocconcini are small balls of cheese, usually mozzarella, that are perfect for appetizers. This recipe is very simple and a great way to kick off an Italian dinner party.

Ingredients

  • 1/4 Cup olive oil
  • 3 tablespoons balsamic vinegar
  • Pinch salt and pepper
  • 18 bocconcini balls
  • 18 cherry tomatoes
  • 1/2 Cup finely chopped basil leaves
  • 18 bamboo skewers

Directions

  • Whisk together olive oil, vinegar, basil leaves, salt, and pepper in a large bowl. Add bocconcini and toss to coat.
  • Cut tops off cherry tomatoes and remove seeds and excess pulp from inside. Stuff a bocconcini inside a cherry tomato and slide on to the tip of a skewer. Assemble remaining ingredients and arrange skewers on a platter to serve.

    Makes 18 skewers
