Creating a Halloween-themed breakfast doesn’t have to mean it looks spooky; it can just sound spooky. Put a creative spin on a classic blueberry pancake by simply calling them “boo”berry pancakes. It will make your breakfast that much spookier…and yummy, too, if you give this recipe a try. They’ll be gobbled right up!
Ingredients
1 1/2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 tablespoon brown sugar
1 1/2 cups light vanilla soy milk (or any milk of your choice)
3 ounces plain Greek yogurt (Chobani is a great choice)
1 egg
1 teaspoon canola oil
1/2-1 cup blueberries, divided
Directions
Combine all ingredients except blueberries in a large mixing bowl.
Lightly fold blueberries into batter once it is thoroughly mixed.
Heat griddle over medium heat & coat with non-stick cooking spray.
Drop 1/4 cupfuls of batter onto griddle.
Cook each pancake for 2-3 minutes then flip. Cook on the other side for about 1 minute.
Serve with your favorite toppings and additional blueberries.
