These cocoa bourbon balls melt in your mouth and are a unique way to use bourbon as a dessert ingredient.

Ingredients

1 Cup Pecans
8 Oz Vanilla Wafers
1/2 Cup Unsweetened coca, divided
1 Cup Confectioner's Sugar, divided
1/4 Cup Light Corn Syrup
1/4 Cup Bourbon

Directions

Preheat over to 325 degrees.

Spread the pecans on a cookie sheet and bake for three minutes. Turn, then bake another three minutes. Be careful not to burn them.

In a food processor pulse the vanilla wafers until they are finely crushed. Add the pecans and pulse until chopped.

In a bowl combine the crushed pecans and wafers with cup of the cocoa, cup of the sugar, the corn syrup and the bourbon.

On a large plate, sift the remaining cup of cocoa and sugar. Shape the crumb mixture into one-inch balls and roll them in the sugar/cocoa mixture.
