Broccoli and Cauliflower Salad

Shawn Rabideau

Florets of broccoli and cauliflower tossed together with a bit of bacon, cranberries and cheddar makes for a colorful and tasty salad. Topped with my sweet dressing this salad even becomes irresistible to those picky kids who aren't big fans of broccoli.

I'll be serving this salad along a couple of others at my Thanksgiving feast, but it's really a perfect dish at any dinner during the fall season.

Ingredients

1 large head broccoli cut into florets rinsed and drained
1 large head cauliflower cut into florets rinsed and drained
4 green onions chopped
1/2 pound crispy bacon chopped
1/2 cup dried cranberries
8 ounces white cheddar cheese shredded
1 cup miracle whip
2 tablespoons rice wine vinegar
1/2 sugar

Directions

Cook your bacon until it's crispy. Remove from pan and set on paper towel to drain.

Meanwhile, chop up your broccoli and cauliflower into florets. Next, chop up your green onions and then your bacon.

Now combine all of your salad ingredients, including the cranberries and cheese, into a large salad bowl.

Use the remaining ingredients (miracle whip, rice wine vinegar and sugar) to blend a sweet dressing. Whisk these ingredients together in a separate bowl until combined completely.

Drizzle evenly over salad and toss.

Serve and enjoy!
