Sundaes are a great party dessert, especially in the summer. They are easy to put together and every one always enjoys them, no matter what age they are.
If you want to make sundaes but want to jazz them up a little bit, these Caramelized Banana and Strawberry Sundaes are just the answer. All you do is sauté some bananas and strawberries with sugar and butter. The fruit gets soft and caramelized and creates a wonderful syrup. Serve the warm fruit on top of cold ice cream and everyone will be enjoying these unique sundaes!
4 Bananas, Sliced lengthwise and cut into 1-inch pieces
2 cups Strawberries, Sliced
1/2 cup Unsalted Butter
1/2 cup Sugar
4 tablespoons Brown Sugar
6 cups of Ice Cream, more or less depending on your preference
Whipped Cream, For Topping
Maraschino Cherries, For Topping
To caramelize the bananas and strawberries, place the butter in a medium sauté pan over medium-high head. Once the butter is melted, add the sliced bananas and strawberries. Toss the fruit in the melted butter. Add the sugar, brown sugar, and salt, and stir to combine. Reduce the heat to medium and continue sautéing until the sugars have melted and created syrup, and the fruit has softened. Remove the pan from the heat and let cool for a couple minutes.
To assemble the sundaes, place 1 scoop (or more if you prefer) of ice cream in a cup or bowl. Top with a scoop of the caramelized fruit, some whipped cream, and a maraschino cherry. Continue until you have run out of caramelized fruit and ice cream, about 6 servings.
These should be served and eaten right after assembly. If you would like to prepare the caramelized fruit in advance, you can sauté it early and then place it in the refrigerator until ready to serve. Once ready to serve, heat up the caramelized fruit and their juices in a sauté pan.
