For kids, strange sounding foods - even if they are filled with cheese - can be intimidating to try. This simple quesadilla recipe though, can be compared to the grilled cheese sandwich we all know and love, so it's a nice way to introduce picky kiddies to something different.
As they get more familiar with the recipe, incorporate favorite vegetables or chicken to dress it up a bit more.
A party favorite, these are best when right off the grill with heaps of salsa and guacamole accompanying them.
Ingredients:
1 white corn tortilla
Handful of finely grated Jack and, or Cheddar cheese
Vegetable oil
Directions:
Lightly apply a small amount of vegetable oil to the outside of the tortilla to prevent it sticking to the grill.
Add a handful of cheese to the inside and grill flat.
Once the cheese is melted, remove from heat, fold in half and then slice in to small pieces. Serve immediately.
