These elegant goat cheese and cherry crostini are the perfect combination of sugar and spice: the cherries give it a sweetness that's balanced by the spice of the jalepenos.
Don't worry about burning your throat, though, because the heat is cooled down by the creamy goat cheese.
1 cup bing cherries, pitted and diced
1/2 jalapeno, seeded and diced
1 scallion, sliced
1 tablespoon balsamic vinegar
Sea Salt & Freshly ground pepper
2-3 teaspoons olive oil
1 loaf french bread, sliced
3-4 ounces goat cheese, softened
Mix the cherries, jalapeno, scallion and balsamic vinegar in a bowl. Add one teaspoon of the olive oil and salt and pepper to taste. Set aside.
Place the bread slices on a baking sheet and brush with olive oil. Toast the bread until slightly toasted.
Top each piece of bread with goat cheese and a spoonful of the cherry relish.
