The minty, refreshing taste of mojitos make them a summer must have every year. Of course you can opt for the usual mint and lime, but I like to jazz up my cocktails, especially when fruit are in season during the summer. Using fresh fruit will bring a subtle sweetness without it being over sugary, like canned fruit or bottled juice from concentrate.
This cherry mojito is a sweet and bubbly sip; it's the perfect signature cocktail at a party or just enjoy it to unwind after a long week at work. I'm also not opposed to making a big pitcher and taking it to the beach! If you are hosting a dinner party, try pairing this cocktail with fish tacos and a fresh summer salad.

Ingredients:
3 cups of cherries, pitted
1 cup of rum
1/4 cup of sugar
2 cups of club soda or sparkling water
20 sprigs of fresh mint
4 cups of ice
Directions:
Blend cherries, mint leaves, lime juice, sugar and 2 cups of ice in a blender.
Stir in the remaining ice, rum and club soda.
Serve in a chilled glass and garnish with lime wedges and cherries!
