It's always a good idea to serve at least one protein based appetizer at a cocktail party. Heavier hors d'ouevres will keep a nice balance to the celebration and this particular appetizer recipe is easy to make and super delicious.
The chicken and artichoke pairing makes for an ideal combination during winter months, but both can be interchanged to fit your tastes. Either way, it makes for a yummy bite sized party food!
1 cup artichokes (canned, not jarred in oil), finely chopped
1 cup cooked chicken breast, chopped
1 cup shredded Parmesan cheese
1 cup mayonnaise
1/4 teaspoon garlic salt
1/2 teaspoon Tabasco
Combine the chopped chicken and artichokes with mayonnaise. Stir well. Then, add the cheese, garlic salt, and Tabasco and mix until well combined.
Add a scoop of the chicken mixture to each filo cup and place on a baking sheet. Cover the quiches lightly with aluminum foil and bake for 7 - 10 minutes or until filling is hot.
