Chicken Tikka is a classic Indian recipe where skewered chicken is marinated in a spicy yogurt sauce and then grilled. "Tikka" translates to mean "bits" or "pieces" and there are variations of this recipe that are more involved, but for this version I tried to keep the prep and grilling easy.
Ingredients:
1 1/2 pounds boneless chicken breasts, cut into 1 1/2- inch cubes
1 Cup plain low-fat yogurt
1 Teaspoon finely minced garlic
1 Teaspoon finely minced peeled gingerroot
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/4 Teaspoon cayenne pepper
1/4 Teaspoon ground turmeric
1/4 Teaspoon salt
Garnish: lemon wedges and grilled onion slices
Directions:
Mix together yogurt, garlic, gingerroot, cumin, coriander, cayenne pepper, turmeric, and salt in large bowl until combined.
Add chicken and turn to coat with mixture.
Cover bowl and marinade in the refrigerator for 1 hour.
Remove chicken from marinade and thread on to skewers; about 4 pieces of chicken per skewer.
Preheat grill according to manufacturer's instructions for medium heat.
Grill chicken for about 8 minutes on one side and then turn to cook another 8 minutes until chicken is no longer pink in the center.
Serve hot with lemon wedges and grilled onion slices on the side.
