This savory salad combines some wonderful flavors and textures. Depending on your party, this delicious salad can be served as a main course or a side dish. We love the idea of serving this at a baby or bridal shower. However, no mater what the occasion or time of year this dish is sure to be a success. Serve in a festive bowl or plates and delight your guests with a beautiful presentation.
Ingredients
2 and a half to 3 Whole chicken breasts
1 whole carrot
2 pieces celery
1 whole onion
4 ounces apples diced
6 ounces celery diced
3 ounces red onion diced
4 ounces grapes cut in half
2 cups mayonnaise
Salt and pepper to taste
Directions
In a large pot of water, place the carrot, celery and onion and about 1 gallon of water season lightly with salt.
Boil and then add the chicken breast, when the water boils again reduce flame to a simmer. Simmer for about twenty minutes till fully cooked.
At this point you can either shut the flame off and cool the chicken or you can remove the chicken from the broth and shock in ice water.
When the chicken is cooled, dice it and place in a large bowl. Add the remaining ingredients and mix then season with salt and pepper.
Chill till needed and then make sandwiches as preferred.
