A classic recipe for a hearty and delicious salad.
Ingredients
2.5 to 3 Whole Chicken Breasts
1 Whole Carrot
2 Pieces Celery
1 Whole Onion
4 Oz Apples, diced.
6 Oz Celery, diced.
3 Oz Red Onion, diced.
4 Oz Grapes, cut in half
2 Cup Mayonnaise
salt and papper to taste
Directions
In a large pot of water, place the carrot, celery and onion and about 1 gallon of water season lightly with salt.
Boil and then add the chicken breast, when the water boils again reduce flame to a simmer.
Simmer for about twenty minutes till fully cooked. At this point you can either shut the flame off and cool the chicken or you can remove the chicken from the broth and shock in ice water.
When the chicken is cooled dice it and place in a large bowl.
Add the remaining ingredients and mix then season with salt and pepper. Chill till needed and then make sandwiches as preferred.
