Chilled Cantaloupe Soup with Lime, Basil, & Mint

A great summer appetizer idea comes in the form of my Chilled Cantaloupe Soup with Lime, Basil, & Mint. Everything about this recipe just screams "summer!" To serve as an appetizer for a party, fill small shot glasses with chilled soup and top each with a mini mint leaf for garnish.

Ingredients

3 cups cubed cantaloupe melon
1/4 cup plain Greek yogurt
1/8 teaspoon ground (powdered) ginger
Zest of one lime
Juice of 1/2 lime
1 tsp agave nectar or honey
2-3 mint leaves
2-3 basil leaves (optional, but delicious)
A pinch of kosher salt
2-3 Tbsp water if needed to thin the soup to desired consistency

Directions

Combine all the ingredients except the water in a blender, and puree until smooth. Adjust the consistency to your liking with water, if needed.

Serve

Chilled
