Homemade chocolate chip cookies. Ice cream. Both are favorite desserts for so many, but put the two together and you get an extra special treat!
For a really simple, yet special treat, spread some ice cream between homemade chocolate chip cookies for a yummy ice cream sandwich. We like chocolate, chocolate chip cookies with vanilla ice cream, but you choose the ice cream flavor you like best!
The original Nestle Toll House Chocolate Chip Cookie recipe, a go-to for most of us, works perfectly for these ice cream desserts.
Though the cookies are soft, they hold up well to the layer of ice cream sandwiched between them.
We kept our desserts simple, but you can fancy them up a bit if you'd like.
After you sandwich them together, and before you place them in the freezer, roll the sides of the ice cream in some colorful cookie sprinkles, or crushed butterfinger candy.
There are lots of possibilities here--have some fun!
Though you'll find this on the back of any bag of Nestle's delicious chocolate morsels, here's the famous recipe the way we like to make it:
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12 ounce package) Nestle Toll House Semi Sweet Chocolate Morsels
1 quart of ice cream-your choice of flavor
Preheat your oven to 375° F. Meanwhile. line baking sheets with parchment paper.
Combine the flour, baking soda and salt in small bowl. We recommend sifting it for best results!
Beat the butter, granulated sugar, brown sugar and vanilla extract in a large mixer bowl until creamy and the sugar incorporated.
Add eggs, one at a time, beating well after each addition.
Gradually beat in the flour mixture.
Once combined, stir in morsels.
Drop batter by 1/8 cup scoop onto prepared baking pans. Bake for 8-10 minutes or until golden brown, but still soft.
Cool one minute, then remove to wire racks and cool completely.
To make the ice cream sandwiches, scoop about 1/2 cup ice cream onto a cookie and top with a second cookie, pressing lightly.
Place on a plate and freeze ice cream sandwiches for 2 hours. Wrap the sandwiches individually in plastic wrap or wax paper to transport or store.
