Cinnamon flavored shortbread with a delicious streusel topping will fit right in with most Thanksgiving menus.
Ingredients
Shortbread Cookies:
3/4 Cup unsalted butter
1/2 Cup powdered sugar
1/2 Cup brown sugar
1 Tablespoon ground cinnamon
2 cups all-purpose flour
1/4 Cup cornstarch
Cinnamon Streusel:
2 tablespoons butter
2 teaspoons ground cinnamon
2 tablespoons brown sugar
Directions
Short Bread Cookies:
Preheat oven to 325F. Prepare your shortbread pan according to the manufacturer's instructions or spray an 8-inch baking pan with very light coat of non-stick cooking spray.
Add butter, powdered sugar, and brown sugar into a mixing bowl and beat until smooth.
Sift together cinnamon, flour, and cornstarch and knead into mixture until thoroughly combined.
Place dough in center of prepared pan and press dough over bottom of pan to edges.
Prick top surface with a fork.
Bake for 20 minutes or until dough just begins to turn brown.
Cinnamon Streusel
Mix together butter, cinnamon, and brown sugar until thoroughly combined.
Remove shortbread from oven and cool for 10 minutes.
Loosen sides of shortbread from pan with a butter knife.
Dot top of shortbread with streusel.
Place under broiler for 2 minutes until streusel is bubbly.
Remove from heat.
Cut shortbread into 2-inch squares or according to your shortbread pan pattern while it is still warm.
