Citrus and Campari Boozy Popsicle Cocktail Recipe

All the sophistication of a garden party cocktail served in a playful popsicle.

No garden party is complete without a Campari Cocktail. The zing of the citrus and the smoothness of Campari make this the perfect summer cocktail to compliment any outdoor festivity that very few can resist, but take away the glass and serve it on a popsicle stick and you blend the sophistication of a garden party with the simple charms of everyone’s favorite summer treat, the popsicle.

Ingredients

1 cup water
1 cup white granulated sugar
2 cups orange juice
1 cup of Grapefruit Juice
1/2 lemon squeezed
1/2 cup Campari

Directions

Combine 1 cup of boiling water and sugar in a mixing bowl and stir until the sugar dissolves. Once dissolved combine the orange and grapefruit juices and the squeezed lemon juice, and stir until blended well before adding the Campari.

While your cocktail rests, zest the lemon to garnish the mixture to give it that extra citrus zing, and then add the contents of your mixing bowl to your popsicle molds and freeze for 6-8 hours before serving.
