From the shell you use to the filling to the toppings, there are an endless amount of ways you can make a taco. Some people fill their tacos with chicken, while others prefer beef, fish, or even just vegetables. And as varied as the fillings might be, the toppings you garnish your taco with are truly endless!
For my tacos, I think the simpler the better - especailly if I've got a hungry crowd of fans on hand to feed. To make these universally pleasing tacos all you need for the filling is chicken and cream cheese. The cream cheese melts over the chicken to create a creamy and flavorful chicken taco, while the addition of some smoked paprika and salsa add a pop of heat.
4 pieces boneless/skinless chicken breast
2 teaspoon smoked paprika
Salt and pepper, to taste
8 ounces cream cheese, softened
8 corn tortillas
Salsa, for topping
Place the chicken on the grill over medium heat. Sprinkle with tops of the chicken with the smoked paprika, salt and pepper. Flipping the chicken once, cook the chicken until there are only a few minutes left until it’s fully cooked. Spread the cream on top of each chicken breast and allow the cream cheese to slightly melt while the chicken finishes cooking.
Meanwhile, place the tortillas on the grill to warm.
Remove the chicken from the grill and slice into short 1/2-inch pieces. Place about 5 slices of chicken in each tortilla and then top with some salsa. Serve immediately.
