Devil's Food, a sweet that tempts many and few can resist, is the star in these sinfully deliciously cupcakes.
6 ounces semi-sweet chocolate, finely chopped
1 1/2 cups boiling water
1 1/2 cups unsalted butter, softened
1 1/2 cups golden brown sugar
4 large eggs
1 teaspoons vanilla extract
1 1/2 cups unsweetened cocoa powder
2 cups cake flour
2 teaspoons baking soda
pinch of salt
Heat oven to 350F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups.
Put chocolate in a heatproof bowl and pour boiling water over it. Stir until chocolate has melted and mixture is smooth; set aside.
Cream together butter and sugar until blended. Add eggs one at a time and beat to incorporate. Beat in vanilla extract.
Stir together cocoa powder, flour, baking soda and salt. Add dry ingredients into mixture and beat until combined. Pour in melted chocolate and beat until blended.
Fill prepared cups 2/3 full with batter. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
