Double Ice Cream Cookie Sandwiches

We have been doing a lot of celebrating this July in honor of National Ice Cream Month. From hosting ice cream socials to making our own homemade flavors, we've been pretty busy making ice cream a top priority. 

Recently, I found out about a new line of ice cream flavored cookies from Cheryl's and I knew I had to give them a try. After I wrapped my head around the fact that I was about to eat some seriously sweet cookies, I opened the box to find the cutest ice cream truck stuffed with Cheryl's cookies. It was the best surprise!

Both colorful and sweet, these cookies embodied my favorite ice cream flavors, but in a not-so-melted form. Some of my favorite flavors include Buttercream Frosted Banana Split Walnut, Buttercream Orange Citrus and Chocolate Marshmallow Pecan, just to name a few. 

Of course I couldn't just eat these delicious cookies on their own. It only seemed fitting that I turn my ice cream cookies into an ice cream sandwich. I'm calling it a double since there is double the flavor!

For your double ice cream cookie sandwich, all you will need are a batch of Cheryl's ice cream flavored cookies, a pint of your favorite ice cream and a handful of colorful sprinkles. Place a healthy dollap of ice cream in the center of two cookies and roll it in on a plate of sprinkles to really hit your sweet spot!
