This is a non-dairy apple cake that looks impressive (thanks to the alternating layers of apples and cake), but is easy to make. The key to making this cake perfectly is greasing your pan well so it doesn't stick to the bottom. That way when you are ready to take it out, it will simply slide right out!
This dessert is going to be a huge hit at your next party! No one can resist a sweet, apple confection, so make this for your party guests and ensure that they will leave feeling completely satisfied. Just make sure you bake enough of this fabulous cake, because it will definitely go fast!
If you are looking for a way to add a little something extra to this cake serve it with a little scoop of ice cream. If you are trying to make this a completely dairy-free dessert, check out your local health-food store for some great non-dairy ice cream alternatives. There are some fabulous brands that use rice and coconut milk!
4 cups sliced apples (Braeburns work well)
2 tablespoons cinnamon
4 1/2 tablespoons sugar
3 cups flour (can do 1 cup whole wheat, 2 cups white flour)
2 cups sugar
3 teaspoonsbaking powder
1 teaspoon salt
1 cup oil
1/4 cup orange juice
1 tablespoon vanilla
Preheat your oven to 375 degrees. Grease a bundt or round cake pan.
Then, mix together the top three ingredients and set aside.
Mix the dry ingredients in a second bowl and set aside.
In a third bowl, combine the wet ingredients (starting with oil). Then, mix the wet and dry ingredients together.
Finally, pour about 1/3 of the batter into the pan and top with 1/2 of the apples. Keep up the pattern until it's: batter, apples, batter, apples, batter.
Bake for 60 minutes or until toothpick inserted inside comes out clean.
