This recipe is an adaptation of many I’ve seen before. I love it because it uses very simple, but fresh ingredients. It’s a great make ahead side!
1/4 cup Olive oil
3 tbsp. orange juice
2 tbsp. apple cider vinegar
1 tbsp. sugar
2 tsp. grated orange zest
1 tsp. ground ginger
1 tsp. salt
1/4 tsp pepper
1 (16 oz pkg) fresh-cut coleslaw (can be in bag from produce section)
1 cup red grapes, halved
2 large Granny Smith Apples, julienned
2 scallions, chopped
2 tbsp. chopped fresh parsley
In a serving bowl, whisk together oil, juice, vinegar, sugar, zest, ginger, salt & pepper until well blended. Add coleslaw mix through rest of ingredients. Toss to coat.
Cover, refrigerate at least 1 hour. Toss again just before serving.
