Easy Boozy Popsicles for Summer

Way back last summer, as I perused my Google Reader, I paused on a post from one of my favorite bloggers – Bakers Royale. While I’d grown accustomed to seeing tons of inspiring pictures and recipes for desserts galore from Naomi, what caught my eye that day was something bigger, something better; a combination of a favorite summertime sweet and a grown up sip – a boozy popsicle.

That recipe, a bourbon peaches and cream pop (pictured), was the start of a series for Naomi and since then I’ve been hooked. Any time she shares a new mix I’m fascinated, but until very recently I never had the guts to try this at home.

Over this past weekend though, I found myself with blueberries, watermelon, mint, tequila and rum, so I thought, why not? Our contributor Coryanne Ettiene of Housewife Bliss shared 5 amazing boozy popsicles a while back and as she makes everything look so simple, it inspired me.

I didn’t have any real supplies – just my ingredients, some popsicle sticks and a freezer, so I sort of winged the whole thing, but really, how can you go wrong with a popsicle spiked with booze?

Sans formal popsicle molds, here are the combos I used – pretty much variations on the mojito popped into a drinking glass from the cupboard and frozen in the freezer. Make sure you buy really fresh fruit for your popsicles. We happen love Driscoll's fresh blueberries.

For me:

muddled blueberries with mint

a tablespoon of simple syrup

1 1/2  ounces of white rum.

For the hubs:

muddled watermelon with mint

a tablespoon of simple syrup

1 1/2 ounces of white rum. (get our liquid watermelon mojito recipe)

To Make:

Combine your ingredients in a glass. Top off with club soda and give it a good stir. Place your glass into the freezer for about 2 hours – you need the mix solid enough to hold a popsicle stick upright. Pop in said stick once ready.

Allow your popsicles to continue to freeze for another 5 hours or so – I left mine in overnight.

Once frozen, remove from the freezer and run your glass gently under warm water, then pull on the popsicle until the whole treat slides out of the glass.

These guys melt pretty quickly so be ready to enjoy immediately!

*You’ll notice with my blueberry mix, most of the mint and blueberries wound up at the top of the pop while the watermelon remained more mixed together. I think a thicker consistency and more muddling would have prevented this, but will just HAVE to try again to see!
