These festive pumpkin cupcakes are perfect for Halloween and all throughout the fall season. For a twist on the theme, try making them as Apple cupcakes, using a spice cake mix, and vanilla frosting dyed red with red sugar crystals. Either way, they’ll look adorable while displayed at your next festive get-together.
Ingredients
1 boxed pumpkin cake mix, prepared as cupcakes, cooked and cooled
1 can cream cheese frosting
Orange food coloring (or red + yellow)
Orange sugar crystals
Pretzel sticks
Directions
Prepare cupcakes as directed on package, OR try making them as Soda Cupcakes.
Use food coloring to dye the can of frosting orange (*if using red + yellow food coloring, use a ratio of 5 yellow drops for every 1 red drop)
Frost cooled cupcakes with orange-dyed vanilla frosting.
Place orange sugar crystals on a paper plate in a thin layer.
Roll sides of frosted cupcakesthrough the orange sugar crystals, coating just around the sides.
Insert one half of a broken pretzel stick on top of each cupcake for the stem.
