I’m a sucker for Greek flavors -- and feta cheese is at the top of the list. The sharp, briny flavor enhances Spanakopita, Greek pizza, and, of course, Greek salad. This simple-to-make dip, inspired by the cheese-studded salad, is bold and full of the flavors of feta, lemon, garlic and olives.
Ingredients:
8 ounces feta cheese, crumbled
2 tablespoons lemon juice
2-3 garlic cloves, peeled and roughly chopped
Olive oil
2 tablespoons chopped Kalamata olives
Directions:
Place the feta cheese, lemon juice and garlic in a blender or food processor. Blend until smooth.
Drizzle about a tablespoon of olive oil over the cheese mixture, and continue blending until it’s well-incorporated.
Pour the blended cheese into a mixing bowl. Add the Kalamata olives and gently fold them in. If you’re not serving the dip right away, cover the bowl with plastic wrap and refrigerate until serving time.
Transfer the dip into a serving bowl. Serve with pita bread triangles and cut-up fresh veggies.
