Fresh Herb & Caper Mediterranean Marinade for Fish

No Mediterranean menu is complete without capers and this fish marinade brings the tastes and aromas of the region right to your BBQ’d fish. 

The zesty lemon blends well with the saltiness of the capers, making this marinade great for any number of fish dishes, included those you have planned for your summer picnic.

For a whole lot of flavor without the heavy ingredients you might use during the colder months, give this recipe a try.

Ingredients:

1 cup of Olive Oil

4 tablespoons of fresh lemon juice

1 tablespoon of fresh lemon zest

4 Basil leaves

1 sprig of Thyme

1/2 cup of capers

Salt and Pepper

Directions:

Grate the lemon zest into a large mixing bowl, and then add the Olive Oil, lemon juice and salt and pepper to taste.

Mix well before adding the fresh herbs and capers.

Allow the marinade to sit at room temperate for 30 minutes to ensure that the aromas of the herbs are absorbed into the marinade. Either use immediately, or store in your refrigerator for up to 4 days in an air tight container before using.

Any extra marinade can be used as a summer salad dressing - just don't use it once the raw fish has touched it!
