Garlic & Herbed Mashed Potatoes

I love this dish at any time, but particularly love to make it during the Autumn. The addition of the garlic and herbs give the potatoes such a savory taste and the extra bit of butter creates a creamy texture.

Pair this potato side with roast pork or turkey for a really tasty Autumn meal!

Ingredients

4 pounds golden potatoes, peeled and cut into quarters
2 tablespoons fresh rosemary
2 tablespoons fresh thyme
3 tablespoons garlic powder (adjust this according to preference)
1 1/2 cup(s) milk
3 tablespoons butter

Note: Makes 8-10 servings

Directions

Boil a large pot of lightly salted water.

When it comes to a boil, add the peeled and cut potatoes. Allow to cook for approximately 20 - 25 minutes or until tender.

Drain the potatoes well. Meanwhile, heat the butter in the same pot used to cook the potatoes.

When the butter is melted, remove from the heat and add the potatoes and milk to the pot.

Using a hand mixer, beat the potatoes until there are no lumps remaining.

Add the fresh herbs and garlic powder and mix until blended evenly.

Salt and pepper the potatoes to taste.

Helpful Hint: If using dried herbs instead of fresh, reduce the amount in the recipe slightly as aged herbs have a stronger potency than fresh!
