A tart German potato salad, this will be great to pair with German beer.
Ingredients
3 lbs. red potatoes, washed, cut into 1 1/2-inch cubes
1/3 Cup olive oil
1/2 Cup red wine vinegar
2 tablespoons grainy brown mustard
1/4 Cup minced green onion
1/4 Cup chopped fresh dill
1/2 Teaspoon salt
1/4 Teaspoon pepper
Directions
Place potatoes in large stockpot and cover with water and 1 tablespoon salt. Bring water to boil over medium-high and cook until tender, about 20 minutes.
Meanwhile, whisk together oil, vinegar, mustard, green onion, dill, salt and pepper until combined.
Drain potatoes and place in a large bowl. Pour oil and vinegar mixture over hot potatoes and toss until potatoes are completely coated. Serve warm.
