Push pops have gone and dressed themselves up for the holidays! The push pop craze has shown us how fun it is to get creative with a reinvented classic and we're working in some seasonal flavors to turn a simple sweet into a holiday treat.
These ginger mocha pops were so simple to make I invited my children to make them. We dressed them up with red and white spotted ribbon to give them a holiday feel, but trust me; one bite and you will taste the holiday spirit. You can even add optional chocolate vodka to the mix for your grown up guests should they need that extra holiday kick.

Ingredients:
6 chocolate cupcakes
2 cups of vanilla ice cream
12 ginger cookies
Handful of white chocolate chips
Directions:
These push pops are made using a layering technique with chocolate cupcake slices, ice cream, and ginger cookies.
Place the first cupcake at the base of the pop, and then add a layer of ice cream and a ginger cookie. Repeat the process until you have reached the top.
Complete the top of the pop with a think layer of ice cream and a sprinkling of white chocolate chips and crushed ginger cookies. Once complete, place in the freezer for an hour before serving.
If you are serving these push pops to a crowd of adults, try adding a little holiday kick by using chocolate vodka. Simply drizzle the vodka over the top of each ginger cookie!
