Ginger Orange Cupcakes

The zesty orange mixed with spicy ginger makes these classic vanilla cupcakes a great addition to an Asian themed birthday party menu.  

The cupakes are slightly sweet, but have an added freshness courtesy of the orange zest. They're a delicious and appropriate dessert for an Asian theme party.

And though we served this at an adult birthday, these after dinner treats will be enjoyed by guests of all ages!

Ingredients

12 Yellow Cupcakes
3 Large oranges for zesting
1/4 Cup grated coconut
1 Tablespoon of freshly grated ginger
4 Cups of Vanilla frosting

Directions

Begin with the basic yellow cupcake - we made ours from a box.

Before frosting your cupcakes, place the zest of your oranges and ginger into a large mixing bowl and blend together with the coconut.  

Then add the vanilla frosting and mix together until fully blended.  

The white of the frosting will take on a pastel orange color (and the scent from the frosting will be irresistible!).  

Once your cupcakes are cool, frost them. Garnish with a bit more orange zest before wrapping and topping them with free Asian themed printables from Gwynn Wasson Designs.
