For flawless looking parfaits, I used a pastry bag with a wide circular tip to place the ricotta into the glasses, but a Ziploc bag with the corner cut out will do just as good of a job.
1 cup low-fat ricotta cheese
2 tablespoons sugar
1 teaspoon vanilla
1/2 cup finely chopped strawberries
1/2 cup crushed gluten-free cookies of your choice
In a small bowl, mix ricotta, sugar and vanilla until combined.
Layer ricotta mixture, cookies and strawberries ending with the strawberries in a tall, slim shot glass.
Keep refrigerated until serving.
