Nothing says summer more than chilled rum and tropical fruit, which is why this cocktail is like summer in a glass. We’re happy to sip this summer concoction all season long, but we’re loving the idea of kicking back with one of these guys while watching the Summer 2012 Olympics. Full of rich dark rum, muddled mango and freshly squeezed orange juice, you may find your guests cheering on the Jamaican team after they take their first sip.
Regardless of what teams you’ll be rooting for, when the sun sets on the Olympic Games on August 12th, be sure to have one of these fruity cocktails in hand. It’s the ideal way to bid adieu to the international games and the summer season.
Ingredients:
4 ounces of fresh orange juice
1 ounce of dark rum
1 ounce of mango nectar
1 fresh mango
1 Lime
Ice
Directions:
Dice up the mango and gently mash in a cocktail shaker using a potato ricer or masher until you have a smooth fruit pulp.
Next, lightly squeeze the lime juice over the pulp to give it a citrus kick. Muddle a bit more. Cover the muddled mango with ice, then pour in the orange juice, rum, and mango nectar. Sitr well, then pour into a tall glass to serve. Garnish with a lime, if desired!
