Grad Cap Chocolate Butter Cookies

Use a graduation cap cookie cutter for this delicious chocolate cookie recipe.

The dough is a little delicate for the rolling pin process, so add more flour if necessary to stiffen it up.

Ingredients

  • 1 Cup unsalted butter, room temperature
  • 2/3 Cup granulated sugar
  • 2 hard-cooked egg yolks, mashed
  • 1 egg yolk, slightly beaten
  • 1 Teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • Chocolate frosting, canned
  • Jar of Chocolate sprinkles

Directions

  • Preheat oven to 350F (175C). Lightly spray a baking sheet with a non-stick cooking spray. Add butter and sugar into a mixing bowl and beat until smooth. Mix in cooked and raw egg yolks. Sift together flour and cocoa powder and gently fold into mixture.
  • Roll out dough on a heavily floured surface to 1/4-inch thickness. Cut out cookies with 2-inch cookie cutters and place 2 inches apart on prepared baking sheet. Bake for 10 to 12 minutes until browned around the outer edges. Remove from oven and cool on pan for 10 minutes then transfer to a wire rack.
  • Ice cooled cookies with chocolate frosting and decorate with chocolate sprinkles.
