Greek Spinach & Feta Cheese Appetizers

Turn this classic Greek food into a modern appetizer for your dinner party by presenting it in a new way. Using frozen filo cups to hold the fillings saves time and labor, but also gives this classic bite a chic look.

We love the combo of the spinach with the two cheeses since the Feta adds more of a bite and the goat cheese offers a great creamy texture to compliment the filo, but if you prefer you can opt for just one of the cheeses.

Ingredients:

1 package frozen filo cups

10 ounces frozen creamed spinach - use only half the package

1/8 cup crumbled Feta cheese

1/8 cup goat cheese, broken up into pieces

1/4 cup chopped walnuts, toasted

1/8 teaspoon grated Nutmeg (I used a little more, but not quite 1/4)

Zest of half a lemon

Directions:

Cook the creamed spinach in your microwave according to the package directions.  Let it cool slightly, and place half of the spinach in a small bowl. Store the other half for another use, or double the remaining ingredients on the list to make more spinach appetizers.

Add the cheeses, walnuts, nutmeg, and zest to the spinach and combine well with a fork.

Fill phyllo cups with your spinach mixture and place on a baking sheet. Bake at 350 for 8-10 minutes and serve.
