Green Frosted Chocolate Fudge Brownies

I have never met anyone who doesn’t like brownies. They are the perfect chocolaty and rich dessert. To make brownies even more decadent, I’ve added a layer of green vanilla buttercream. The green buttercream makes this dessert more festive to celebrate St. Patrick’s Day, but you could tint your frosting any color you'd like to match your celebration.

Ingredients:

Chocolate Brownies:

1 cup All Purpose Flour

1/2 cup Cocoa Powder

1 teaspoon Baking Powder

1 teaspoon Salt

2/3 cup Vegetable Oil

1 1/2 cups Sugar

2 teaspoons Pure Vanilla Extract

2 Eggs

Green Buttercream:

1 cup (2 Sticks) Unsalted Butter, at room temperature

2 cups Confectioners Sugar

Pinch Salt

1 teaspoon Pure Vanilla Extract

A few drops of Green Food Coloring

Directions:

To make the brownies, preheat the oven to 350 degrees F. Line a 9x9 baking pan with foil, and lightly grease the foil. Set aside until needed.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.  Set aside. In a separate medium bowl, combine the oil, sugar, vanilla, and eggs.  Add the flour mixture and mix until fully incorporated. Pour the batter into the prepared baking pan.

Bake the brownies until they set and a toothpick inserted into the center comes out clean, about 35-40 minutes. Remove the brownies from the oven and let cool completely in the pan. 

While the brownies are cooling, make the buttercream. Cream the butter in the bowl of stand mixer fitted with the whisk attachment until light and fluffy, about 5 minutes.

Add the confectioners sugar and salt and mix (gradually increasing in speed) until the sugar is fully incorporated, about 5 minutes. You may need to stop the mixer and scrape down the sides of the bowl a couple times. 

Add the vanilla and whisk until the mixture is light and fluffy, about 3 minutes. Once the buttercream is creamy and airy, the buttercream is ready to be colored. Add the food coloring and beat until all of the frosting is colored green and no white is showing.

To frost the brownies, remove the brownies from the pan and place on a clean surface. Frost a thick layer of buttercream on top of the complete surface of the brownies. Cut the brownies into 9 squares. Serve and enjoy!

These brownies last up to 3 days in a sealed container.
