Grilled Mixed Vegetables on the BBQ

While you may be putting a lot of focus on the meat, it's important to throw some vegetables on the table, as well! If you don't want to stick with fresh veggies only, you can make these yummy kabobs that both vegetarians and meat eaters can enjoy!

Ingredients

3 medium bell peppers chopped into 1.5 inch squares
1 large red onion chopped into 1.5 inch squares
1 cup cherry tomatoes
1 cup firm tofu chopped into 1.5 inch squares
2 cloves finely chopped garlic
2 tablespoons soy sauce
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Directions

Add all the chopped ingredients into a large Ziploc bag.

Close the zipper seal and mix everything around together using your hands so the ingredients are thoroughly covered in the soy sauce, olive oil, salt, garlic and pepper.

Let marinate from 10 minutes to 1 hour.

Using metal skewers, or wooden skewers that have been soaked in cold water for half an hour, create vegetable kabobs with the vegetables and tofu. Alternate each type of veggie placed on the skewer.

Place vegetarian tofu kabobs on the BBQ for about 2 minutes per side, and rotate as soon as the side on the grill has nice brown grill marks.
