You would never believe that pop tarts could be made at home and be just as easy as store-bought pop tarts. All you need is puff pastry and apricot jam (or any other flavor you like). While they're just as simple to make, homemade pop tarts are so much more fresh and flavorful than those from the store.
Bake the homemade pop tarts in the oven until they get crispy and puffy and then top with a dollop of whipped cream. You’ll have a delicious treat that you can enjoy even more because you’ve made them from scratch!
2 Sheets Puff Pastry
1/2 cup Apricot Jam/Preserves
1 Egg, Beaten
Turbinado Sugar, for Topping
1 cup Whipped Cream or Cool Whip
Preheat the oven to 400 degrees. Line 1 baking sheet with parchment paper or a silicone mat. Set aside until needed.
Cut each puff pastry sheet into 6 rectangles, creating 12 rectangles total. Place 6 pieces of puff pastry on the baking sheet. Place 1 tablespoon of apricot jam in the middle of each puff pastry piece. Using a pastry brush, brush the edges of the puff pastry with the beaten egg. Top with another piece of puff pastry.
Using the tines of a fork, seal the edges of the puff pastry sheets together. Crush the tops of each pop tart with the beaten egg and then sprinkle with Turbinado sugar. Using a sharp knife, cut a small sliver in the middle of each pop tart.
Bake the pop tarts until they puff up and turn golden brown, about 15 minutes. Allow the pop tarts to cool before serving. Once ready to serve, top with a dollop of whipped cream or cool whip. Enjoy!
These pop tarts last up to 1 week in the refrigerator (without the whip cream).
