Making your own homemade is not as difficult as you think when you follow this simple recipe. Using the cold, white, layered landscape as inspiration, make an easy ice cream cake that will have party guests licking their lips and begging for more.
Note: I allowed the cool whip to rest about ten minutes to come to room temperature before applying it. This allowed for easier spreading.
On your platter, or a large piece of cardboard covered with tin foil, place the 12 ice cream sandwiches into a rectangle shape (3 rows by 4 rows).
Top this first layer of sandwiches with a generous layer of cool whip.
Then, add another layer of sandwiches on top of the first and top this with a layer of cool whip. Repeat once more for a final third layer.
After the third layer of sandwiches has been laid, use the remaining cool whip to coat the top of the cake as well as its sides.
