Making your own homemade ice cream birthday cake is not as difficult as you think when you follow this simple recipe. Using a cold, white, layered landscape as inspiration, make an easy ice cream cake that will have party guests licking their lips and begging for more.
Note: I allowed the cool whip to rest about ten minutes to come to room temperature before applying it. This allowed for easier spreading.
42 count box of ice cream sandwiches (I brought mine at the local BJs for around $10)
3 containers of Cool Whip
Gel cake decorating tubes
1 set of camouflage candles
1 large platter (or piece of cardboard covered in tin foil)
On your platter, or a large piece of cardboard covered with tin foil, place the 12 ice cream sandwiches into a rectangle shape (3 rows by 4 rows).

Top this first layer of sandwiches with a generous layer of cool whip.

Then, add another layer of sandwiches on top of the first and top this with a layer of cool whip. Repeat once more for a final third layer.

After the third layer of sandwiches has been laid, use the remaining cool whip to coat the top of the cake as well as its sides.

Using the gel decorating tubes, pipe a Happy Birthday message across the top.
Place cake in freezer until cake time.
