A homemade and hearty tortellini soup can be prepared ahead of time and really makes for a perfect holiday party entree. Put it in the crock pot, and it's ready to serve when you are.
We passed baskets of warm sour dough bread to go with the delicious soup, and everyone was happy. Clean-up is a snap so you can get down to the serious business of the gift exchange!
1 tablespoon olive oil
3 garlic cloves, minced
1 small onion, chopped
1 cup carrots, sliced on the diagonal
1 cup sliced zucchini
3 cups of sliced white mushrooms
1 6 ounce bag of baby spinach
2 - 14.5 ounce cans of chopped tomatoes with basil, garlic and oregano
2 - 14.5 ounce cans of chicken broth
2 tablespoons fresh Italian leaf parsley, chopped
2 tablespoons fresh basil, chopped
Add the olive oil, minced garlic and chopped onion to a large pot. Cook over medium heat for about 5 minutes.
Next, add the carrots, zucchini and mushrooms and cook for 5 more minutes. Add the spinach, canned tomatoes, chicken broth, parsley and basil. Cover and cook over medium-low heat for 10 minutes.
Add the frozen tortellini and cook until tortellini is done--about 10 minutes.
Simmer a few minutes, top with freshly grated parmesan cheese, and serve--or refrigerate and reheat when it's party time.
