Bellinis and brunch go hand-in-hand -- at least in my house.
I will always remain a mimosa lovin' lady, but when my girls and I get together for a brunch celebration at home, I like to surprise them with something spiked and special. Mimosas are always on our favorite local restaurants' brunch menus, but the same can't be said for Bellinis - especially this particular peach one.
What's so unique about our peach bellini recipe is that we skip the puree and go with a sorbet instead. The result? A seriously fresh, flavorful and fun cocktail the girls will love.

All you'll need to make it happen is:
champagne flutes
peach sorbet (or strawberry, or raspberry, or banana, or...well, you get the point)
small ice cream scoop
champagne (or sparkling wine)
Directions: Pour your glass of champagne about 3/4 of the way. Then, simply top with a scoop of sorbet and a bit more champagne if needed. Allow to rest for about 5 minutes before you serve.
Because they're at their best after a few minutes of pouring, these Bellinis are perfect to make a few minutes ahead of when your guests will arrive so you can greet them with a glass when they walk in.
They'll love the combination of tart bubbly champagne and creamy cold sorbet just as much as our girls do - and get creative with your flavors. You can use this recipe with any sorbet you have on hand or prefer.
