I always saw ice cubes as those blocks that kept drinks cold for a few minutes then melted down rapidly flooding your sip with water and sucking out flavor.
A bit harsh, I know.
A recent crafty idea has changed my former belief, though. Instead of mumbling and grumbling over these supposed water weary cubes I decided to take matters into my own hands and come up with an acceptable form for my drinks/cocktails.
First, I simply froze sprite in an ice cube tray. The sprite was very very sweet and since I'm not a big fan of such a high sugar content in my cocktail, I decided to try club soda. While the Sprite was too sweet, the club soda, on the other hand, was too bland.
End result? I spiked the club soda -- with citrus juice. Then, to dress my cocktails up more I added lots of color to the mix!

Such a rainbow of hues would be a perfect way to dress up a drink or cocktail for Saint Patrick's Day (or any summer celebration).
Here's how to make rainbow ice cubes at home:
Ingredients/Supplies
ice cube tray
measuring cup
club soda
food coloring
citrus juice (or any other flavor you like)

Start by mixing your club soda with the juice of your choice. A 1/4 cup of soda will give you about 5 ice cubes in an average tray. I'm a big citrus fan so I added a few teaspoons of lime juice to the soda before mixing in my food coloring.
I mixed in my colors one at a time following the traditional red, orange, yellow, green, blue and purple scheme.
Tip: Mix your ice cube mixture in a measuring cup with a spout so it's easier to pour.
A little goes a long way with food coloring so start with a little drop. For the red, yellow, green and blue I needed just 1-2 drops of color. For the orange I used a drop of yellow and half a drop of red, same with purple, but blue and red respectively.
Freeze for at least 2 hours -- this will ensure the club soda mixture sets completely.
Then, pile high in a glass and top with your favorite sip!
