IL Sole Bellini

IL Sole, the quite Italian restaurant, located on the not so quiet Sunset strip, has been serving Hollywood insiders from the neighboring hills for over a decade. Celebrity clientele include the likes of Jen Aniston, Drew Barrymore, Eva Longoria, Chance Crawford, Jessica Simpson, Cameron Diaz, and countless others.

Ingredients

White Peaches
Dry Prosecco

Use only white peaches to make a Bellini. Never puree the peaches by machine - always use a food mill or meat grinder to make the pulp and then force it through a fine sieve.

If the peach puree is very tart, sweeten it with just a little sugar syrup. Refrigerate the puree until it's very cold.

When the peach puree is ready, mix it with very cold, dry Prosecco in the proportion of 1 part peach puree to 3 parts wine or, for each drink, 1 once (30ml) peach puree and 3 ounce (100ml) wine. Pour the mixture into well-chilled glasses.
