Pasta salad is a sure fire way to please your guests on Super Bowl Sunday. This winning dish will satisfy their hungry appetites and it is easy to make, which makes it the perfect recipe for a busy host!
This Superbowl recipe is very basic, so you can get creative in the kitchen and add some of your favorite ingredients. Some of our favorite additions are: cooked chicken, turkey, bacon, ham, pepperoni, Parmesan, cheddar or Monterrey Jack cheese. Add some tasty veggies like or roasted red peppers for some extra sweetness or jalapenos for a spicier alternative. All of these options let you customize this dish for your crowd.
You can also make this a little healthier by cooking whole-wheat pasta and minimizing the amount of mayonnaise you use. Some great substitutions are cottage cheese or plain yogurt mixed in with part of the mayonnaise. This really helps cut down on calories, so you can avoid the Monday morning regret you usually feel after Super Bowl Sunday. Buon Appetito!
1 box (16 oz. ) pasta (we like bow tie or spiral)
1 cup mayonnaise
1 cup Italian or Balsamic Italian Vinaigrette Dressing
5 cups assorted chopped vegetables|
1 can (6-1/2 oz.) tuna, shrimp or crab meat, drained (optional)
Cook the pasta according to package directions; drain and rinse with cold water until completely cool.
In large bowl, combine mayonnaise, dressing and vegetables. Toss the pasta with the mayonnaise mixture.
Stir in tuna, shrimp or crab meat. Toss, if desired, with additional Mayonnaise before serving. Use any combination of the following: red, green or yellow bell peppers, Spanish, red or green onions, carrot, tomato, cucumber, olives, artichoke hearts, broccoli, cauliflower or celery.
