Forget marching bands and pep talks, halftime at a tailgate party is for huddling around a super bowl of turkey chili.
Cook a big batch of this chili for guests that tastes great, but won't leave them feeling so guilty they skip the football theme cupcakes you have planned for dessert.
1 medium onion chopped
3 large garlic cloves minced
2 tablespoons olive oil
1/4 lb of lean ground turkey meat
2 cans of medium hot vegetarian chili (Amy’s Organic Medium Chili works great!)
Over low heat and in a large pot cook the onions in the olive oil until they are translucent in color. Add in the ground turkey meat and cook until fully browned, add the minced garlic and keep stirring as garlic cooks fast and can burn.
Add in the 2 cans of vegetarian chili and keep stirring.
Serve "build your own style" with an assortment of toppings and cheeses, low fat shredded cheddar cheese, reduced fat sour cream, scallions, and minced onion among others!
Makes 6-8 servings.
